In addition, Nick Blight from the Convention Bureau has the following suggestions for other tours:
Adelaide
Adelaide Central Market Tour – Delegates are taken on a culinary journey through the Adelaide Central Markets, meeting the stall operators and sampling their wares with the option to purchase. There is a range of different tours and you can incorporate a breakfast into the tour or even a lunch.

Barossa
Seppeltsfield – Seppeltsfield is famous for their fortified wines and it is easy to see why. They offer tours into the Barrel Hall where you can sample 100 year old fortified wine and even a fortified wine from the year of your birth! It is a great experience, I can vouch for it as I have done it before. Incredible!

Jacob’s Creek – Jacob’s Creek do some really cool experiences, focusing on wine education. So if you have some delegates who are wine lovers, then these are the tours for them.

Glenelg
Temptation Sailing – See dolphins in their natural habitat in beautiful Glenelg. I have also done this tour and it is so lovely and relaxing. Unfortunately I didn’t get to see dolphins (I was on the night cruise) but the ones during the day would be more conducive to seeing and swimming with dolphins.

Various
Integrity Tours – These guys run tours in the Adelaide Hills, McLaren Vale and in the CBD as well. The groups are smaller than those of SeaLink, so it might be a little bit more personalised.
